Coconut treats for endurance athletes

The lovely Linn Madsen over at Savoy Sorbet has added a new flavor to her repertoire, coconut. I sampled the coconut sorbet at the Coppell Farmers Market on Saturday, and let me tell you, it was heavenly. I love Linn’s sorbet as she uses the freshest ingredients, everything is natural and the sorbet is just so tasty. Unfortunately Linn told me she is having to change the recipe for the coconut sorbet. It’s jam packed full of coconut milk, which prevents the sorbet from freezing well. In my opinion this isn’t a bad thing, as the sorbet was like soft serve ice-cream, creamy and delicious.

This also got me thinking. I’ve read how wonderful coconuts and coconut products are for athletes. Coconut water is nature’s sports drink, coconut oil is instant energy. So, if the sorbet is packed full of coconut milk, I can feasibly say that it is doing my body good when I eat it. Right??

It’s my theory and I’m sticking to it.

I hastily picked up some coconut sorbet from Linn before the formula changes and I’m enjoying every mouthful. Guilt free.

    Hey! Thanks Lisa! I’ve actually worked on this recipe a couple of times and have settled on the creamy version – finally.

    Yes – coconut is mother natures breast milk. You could live on it!
